Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. zucchini or yellow squash, 1/4 c. chopped onions, 1 can cream chicken soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook sliced squash and chopped onion in boiling salted water for 5 minutes.
Drain and combine with chicken soup, sour cream and shredded carrots.
Combine stuffing mix and oleo.
Spread 1/2 of stuffing mix over 12 x 7 1/2 x 2 casserole.
Spoon vegetable mix over stuffing.
Sprinkle remaining stuffing mix over vegetables.
Bake in 350Β° oven for 25 to 30 minutes or until bubbly.
