Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 lb. squash, cut up, 1 small onion, cornbread stuffing, 1 tbsp. butter and 2 c. grated cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat oven to 350°.
Steam cut up squash and diced onion together until tender with salt and pepper.
Drain.
In baking pan, put squash and mash.
Add butter and more salt and pepper, if needed, to taste.
Add enough stuffing to soak up liquids.
Add 1 cup cheese and mix with squash.
Put the rest of the cheese on top as a topper.
Sprinkle with paprika and bake at 350° until cheese is melted.
