Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. fresh or frozen yellow squash, 1 small onion, chopped fine, 1/2 pt. sour cream, 18 saltine crackers and 1 c. grated cheddar cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Boil squash; salt and pepper to taste.
Drain and mash squash; add onion, margarine, 12 saltine crackers (crumbled), 1/2 of the cheese and sour cream.
Pour into casserole dish.
Crumble remaining saltines and sprinkle on top.
Cover with the remaining cheese and bake at 350Β° for 40 to 50 minutes.
