Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 1/2 lb. yellow squash, 1/2 tsp. salt, 2 1/2 tbsp. margarine, 2 c. grated sharp cheese and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil squash until tender; drain and mash.
Add cheese, salt and onion and mix.
Stir in eggs and mix.
Pour in greased casserole dish.
Dot with margarine, paprika and green pepper. Bake at 350Β° for 30 minutes.
May top with 2 cups herb seasoned bread crumbs before adding margarine, paprika and green pepper.
