Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash (fresh or frozen), 2 tbsp. chopped pimento, 1 medium grated carrot, 1 small chopped onion and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt half of margarine in casserole dish.
Mix in croutons on bottom of casserole dish.
Cook squash and drain well.
Mix all other ingredients.
Season with salt and pepper to taste.
Pour over croutons and sprinkle reserved crumbs on top.
Bake at 350Β° for 20 to 30 minutes or until bubbly.
Can be prepared ahead of time.
Very good reheated (microwaved).
Can also be frozen.
