Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 3 to 4 lb. yellow squash, sliced thin, 1 1/2 green peppers, chopped, 2 large onions, chopped, 1 c. rice (uncooked) and 4 oz. w.w. cheddar cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Put all ingredients (except cheese) into a large bowl and mix with hands.
Spray a 9 x 13-inch pan with nonstick spray.
Empty bowl into pan and cover with foil.
Bake at 350Β° for 1 hour. Remove foil and stir.
Place cheese atop.
Bake until golden brown and liquid is absorbed.
Makes 8 large portions.
