Spud Cookies
Spud Cookies is an moderately easy dinner. Made with 1/2 c. shortening, 1 c. brown sugar, firmly packed, 1 egg, 1 tsp. vanilla and 1 c. all-purpose flour, sifted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream shortening and brown sugar.
Add egg and vanilla.
Mix well.
Combine flour, baking powder, salt and potato flakes.
Add to the shortening mixture.
Mix well.
Add nuts and mix.
Batter will be stiff.
Let set 30 minutes.
Drop by teaspoon on greased cookie sheet.
Bake at 375Β° for 10 minutes.
Do not overbake.
