Spring Vegetable Soup
Spring Vegetable Soup is an moderately easy dinner. Made with 4 green onions, 3 tbsp. butter, 2 potatoes, peeled and thinly sliced, 2 carrots, thinly sliced and salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onions in butter about 2 minutes. Add potatoes and carrots and saute 2 minutes longer. Add 3 cups water and 1 teaspoon salt. Bring to a boil and simmer 12 minutes or until vegetables are tender. Add peas and cook 5 minutes longer. Add cream.
Heat gently and season to taste with salt and pepper.
