Sponge Cake
Sponge Cake is an moderately easy dinner. Made with 5 eggs, 2/3 c. sugar, 1 c. sifted flour, 1 tbsp. cornstarch and 1 grated lemon rind, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat eggs with sugar in double boiler until warm.
Add vanilla and lemon rind.
Place in mixer and beat until light and silky. Gently fold in the combined flour and cornstarch.
Place in 7-inch cake pan which has been buttered and dusted with flour.
Bake at 350° to 375° until springy to touch.
