Split Pea Soup
Split Pea Soup is an moderately easy soup you can prepare in about 1 hour 56 minutes. Made with c. dried peas, qt. water (8 c.), ham bone with ham, c. chopped celery and c. sliced carrots, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Wash peas.
Put in water to boil.
Simmer 2 minutes.
Remove from heat.
Cover and let stand 1 hour.
Add ham bone, vegetables, bay leaf and thyme.
Heat to boiling.
Reduce heat and simmer, covered, 2 1/2 to 3 hours or until peas are soft.
Remove bone. Cut off meat and dice.
Return meat to soup.
Season to taste with pepper.
Makes about 2 quarts.
