Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with ham shank, 1 c. split peas, 1 medium onion, chopped, 1 medium carrot, chopped and 1 tbsp. dried parsley, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place all ingredients in large kettle.
Bring to boil, reduce heat and simmer 2 hours.
Lift out ham shank and when cool, pick lean meat from bone and return to soup.
Discard bone and fat. Add salt if necessary.
Makes 4 to 6 servings.
(Freezes well.)
