In Dutch oven or large kettle over medium heat, heat ham bone, split peas, carrots, onion and 7 cups of water to boiling. Meanwhile, tie allspice, peppercorns and bay leaf in a cheesecloth bag.

Add to ham bone mixture.

Reduce heat to low and simmer uncovered for 1 hour.

Discard spice bag.

Add salt to taste. Remove meat from bone and return meat to soup.

Discard bone. Makes about 7 cups or 6 servings.
