Made with 2 (10 oz.) frozen chopped spinach, thawed and drained, 1 pt. creamed cottage cheese, 2 eggs, beaten, 1/2 c. parmesan cheese and 1/2 c. flour, this recipe delivers authentic, satisfying flavors. Put all ingredients, except cottage cheese, in a pot.

Cook over medium heat until spinach boils.

Remove from heat.

Add cottage cheese and purΓ©e in blender.

Return to pot, bring to a boil and simmer for 30 minutes.

(Can be frozen.)
