Spinach Salad
Spinach Salad is an impressive dinner. Made with 2 qt. washed and well drained spinach leaves, 1/2 lb. fresh mushrooms, 1/2 lb. lean bacon, fried crisp and crumbled, 2 hard-cooked eggs, roughly chopped and 5 scallions, chopped, this recipe delivers authentic, satisfying flavors. Tear spinach into bite size bits; place in salad bowl. Arrange crumbled bacon, eggs, scallions and croutons over the spinach and mushrooms.
Combine all remaining ingredients; mix well.
Just before serving, or at table, pour dressing over salad and toss lightly.
Serves 4.
