Spinach Madeline
Spinach Madeline is an moderately easy dinner. Made with 2 pkg. frozen chopped spinach, 4 tbsp. butter, 2 tbsp. flour, 2 tbsp. chopped onion and 1/2 c. evaporated milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Prepare spinach according to package.
Drain and reserve liquor.
Melt butter in saucepan over low heat.
Add flour, stirring until blended.
Add liquor slowly.
Add seasonings and cheese.
Stir until melted.
Combine with spinach.
This may be served with buttered bread crumbs.
Freezes well.
Serves 5 to 6.
