Spinach Lasagna
Spinach Lasagna is an impressive dinner. Made with 1/2 lb. lasagna noodles, cooked, 2 tbsp. olive oil, 2 lb. ground beef, 1 medium onion, finely chopped and 1 clove garlic, finely chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown beef in oil with onions, garlic and parsley.
Add tomato paste, water, salt and pepper; cook 1 1/2 hours.
Mix eggs, cottage cheese and spinach.
Layer in a sprayed lasagna pan the noodles, sauce, Mozzarella-cottage cheese mixture, noodles, cottage cheese mixture, Mozzarella, sauce and Parmesan cheese.
