Spinach Lasagna
Spinach Lasagna is an impressive dinner. Made with 2 (10 oz.) pkg. frozen spinach or 1 lb. fresh, 2 cloves garlic, minced, 1 tbsp. parsley, 1 tbsp. basil and 1 tsp. oregano, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Steam spinach until done.
Place in blender with garlic, parsley, basil and oregano.
Process until mixed, not liquid.
In a bowl, combine wheat germ, tomato sauce and tomato paste.
Add spinach mixture; stir to blend.
Cook noodles; add oil.
Mix Ricotta cheese, salt, pepper and parsley.
Preheat oven to 375Β°. Butter bottom of a 9 x 13-inch pan.
Layer first the noodles and spinach mixture, then Ricotta mixture.
Sprinkle with Parmesan, then Mozzarella.
Repeat.
Cover with remaining Mozzarella and tomato sauce.
Bake for 30 minutes.
Yields 10 to 12 servings.
