Combine sweet potatoes with next 8 ingredients.
Add 1/4 cup peanuts, finely chopped.
Place in a 2 quart casserole and bake at 400Β° for 25 minutes.
Combine coconut, brown sugar and remaining peanuts (1/2 cup).
Sprinkle over top of sweet potato mixture bake approximately 10 minutes longer, or until lightly browned.
Makes about 6 to 8 servings.
