Special Occasion Mashed Potatoes is an moderately easy dinner. Made with 3 lb. potatoes (about 12 medium), peeled and cooked, 1 (8 oz.) pkg. cream cheese (room temperature), 1/4 c. butter or margarine, 1/2 c. sour cream and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Mash hot peppers.
Add cream cheese and butter in pieces.
Beat until both melted.
Mix in sour cream.
To milk, add eggs and onions; whip lightly.
Add to potato mixture along with seasonings. Beat until light and fluffy.
Place in greased 9-inch round casserole dish.
Refrigerate several hours (can be chilled overnight if not needed immediately).
