Spanish Rice is an moderately easy dinner. Made with 1 medium onion, chopped, 1 medium green pepper, chopped, 1/4 c. bacon grease, 1 1/2 c. washed uncooked rice and 1 (28 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion and pepper lightly.
Set aside.
Add rice and brown, stirring often.
