Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1/2 lb. bacon, 1 medium onion, diced, 1/4 c. catsup, 1 tbsp. worcestershire sauce and 1 qt. tomato juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Fry bacon crisp, remove from heat and crumble.
Pour off all but 2 tablespoons bacon drippings.
Cook onion and pepper in bacon drippings until onion is clear.
Add tomato juice, catsup and Worcestershire sauce.
Bring to a boil.
Add rice and bacon; mix well.
Cover with a tight fitting lid and remove from heat.
Some people like their Spanish Rice dry, others prefer it juicy. Adjust the rice to suit your taste.
