Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1/2 c. margarine, 1/2 c. chopped onion, 1/2 c. chopped green pepper, 2 (16 oz.) cans tomatoes, cut up and 1/2 tsp. celery salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt margarine in microwave; add onions and green pepper. Microwave on High for 5 minutes.
Add tomatoes and celery salt; microwave on High for 6 to 8 minutes or until tomatoes come to a boil.
Add rice, cheese and olives; stir well.
Microwave on 30% power for 30 minutes or until rice is tender.
(It takes a little longer.)
Stir; garnish with green pepper.
