Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 6 slices bacon, 1/4 c. chopped fine onions, 1/4 c. chopped fine green pepper, 3 c. cooked rice, rinsed and drained and 1 (16 oz.) can tomatoes, chopped fine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook bacon in skillet until crisp.
Remove, drain, cool, then crumble.
Pour out all grease drippings, reserve 2 teaspoons in the skillet.
Add onions and pepper; cook until tender.
Add the other ingredients and cook for 15 minutes on low heat.
You can use your own canned tomatoes, if you have them.
