Spanish Cauliflower
Spanish Cauliflower is an moderately easy dinner. Made with 1 (16 oz.) bag frozen cauliflower, 1/4 c. butter or margarine, melted, 2 tbsp. sugar, 1/2 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook cauliflower in boiling water 5 to 6 minutes.
Drain well. Combine butter, sugar, salt, pepper and cracker crumbs.
Stir in green pepper, tomatoes, onion, 1 1/4 cups cheese and hot cauliflower.
Pour into greased 2-quart casserole dish.
Sprinkle with remaining cheese.
Bake at 350Β° for 1 hour.
