Southern Style Minestrone
Southern Style Minestrone is an moderately easy dinner. Made with 2/3 c. chopped onion, 1 lb. ground chuck, 1 (15 oz.) can mixed vegetables, 1 (10 3/4 oz.) can cream of potato soup and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine onion and ground beef in soup pot.
Cook until meat has browned.
Drain excess grease.
Add remaining ingredients and bring to a boil.
Reduce heat to medium and cover the pan.
Cook for 8 to 10 minutes or until macaroni is tender.
Stir occasionally to prevent sticking.
I sometimes add a few drops of Tabasco sauce. I usually do not add salt because most of the canned products already have salt in them.
