Southern Pineapple Pound Cake
Southern Pineapple Pound Cake is an moderately easy dinner. Made with 1/2 c. shortening, 1/2 c. butter, 2 3/4 c. sugar, 6 large eggs and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cream shortening, butter and sugar.
Add eggs, one at a time. Beat well after each.
Add dry ingredients (sifted together) one spoon at a time, alternately with milk and vanilla.
Stir in pineapple; blend well.
Pour into greased large pan.
Place in cold oven; turn temperature to 325Β°.
Bake for 1 1/2 hours or until top springs back.
Let stand a few minutes; run knife around edge.
Remove carefully to rack.
Combine 1/4 cup butter, 1 1/2 cups confectioners sugar and 1 cup drained pineapple and pour over hot cake.
