Southern Grits Casserole
Southern Grits Casserole is an moderately easy dinner. Made with 2 1/2 c. water, 1 c. quick cooking grits, uncooked, 3 tbsp. butter or margarine, 1 1/2 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Microwave the
High until boiling in a 1 1/2 quart casserole use the conventional range to boil.
Add grits, butter, salt and pepper to the water.
Cover with waxed paper. Microwave minutes, stirring twice.
Stir some of the hot grits into the beaten eggs.
Stir in 1 cup of cheese and add egg-cheese mixture to grits.
Stir well to mix. Microwave on
High 5 minutes.
Rotate dish 1/2 turn after 2 minutes.
Sprinkle the reserved
1/2 cup cheese on top of mixture.
Cover. Microwave on High 2 minutes or until cheese melts.
3 to 4 minutes before serving.
Serve hot. Yield
6 to 8 servings.
