Snow White Soup
Snow White Soup is an moderately easy dinner. Made with 1 medium head cabbage, 6 tbsp. butter, 6 tbsp. flour, 1 pt. milk plus 1 pt. cream or milk and 1 bay leaf, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook cauliflower and discard broth.
Make a roux with the butter and flour, then add to roux 1 pint milk and bay leaf and simmer 10 to 15 minutes, stirring occasionally.
Remove bay leaf and blend cooked mixture, half of cauliflower, 1 pint cream or milk, salt and vegetable cubes until liquified.
Reheat and add the remainder of the cauliflower (finely chopped).
(Half the cauliflower is blended, half is chopped for texture.)
Garnish with cheese.
Serves 4.
