Smoked Gar
Smoked Gar is an moderately easy dinner. Made with 1 lb. gar, cut lengthwise into 1-inch strips, 1 can tomato sauce (small), 1 can ro-tel tomatoes, 1/2 stick butter and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Season gar.
Smoke 4 hours over ash or hickory.
Remove and cut into 1-inch pieces.
Melt butter and brown gar for 1 minute. Add the rest of ingredients.
Cover and simmer for 15 minutes.
To serve, pour desired amount of beans over rice.
Add a few pieces of gar and sauce.
Enjoy.
