Smoked Eel Stew
Smoked Eel Stew is an moderately easy dinner. Made with 1 1/2 lb. smoked eel, cut into 2-inch pieces (can substitute smoked cod or trout), 7 very small potatoes, washed but not peeled and cut in half, 2 c. pearl onions, peeled, 3 large carrots, peeled, trimmed and cut into julienne strips and 4 to 6 c. fish stock, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine all of the ingredients in a heavy-duty 6-quart pot over high heat.
Simmer 40 to 45 minutes or until potatoes are tender. Skim off the excess fat.
Serve hot with plenty of bread.
