Skillet Hopping John
Skillet Hopping John is an moderately easy dinner. Made with 1/4 c. margarine, 1 clove garlic, chopped, salt and pepper to taste, chopped ham and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute margarine, clove of chopped garlic and chopped onion. When cooked a little, add the chicken broth, the rice and black-eyed peas (drained and rinsed).
Can add crushed red pepper, salt and pepper to taste.
(I add 1 can chopped green chilies instead of red pepper and chopped ham.)
I had to add a little water.
Simmer for about 30 minutes.
