Skillet Cookies is an moderately easy dinner. Made with 1/2 c. margarine, 2 egg yolks, well beaten, 1 c. sugar, 1 c. dates and 2 3/4 c. rice krispies cereal, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt margarine in heavy skillet.
Add beaten egg yolks, sugar and finely cut dates.
Cook about 6 minutes, stirring constantly. Remove from heat.
Add cereal, nuts and vanilla.
Form into balls and roll in coconut.
