Sicilian Rice Balls
Sicilian Rice Balls is an moderately easy dinner. Made with 1 small jar pignoli (pine nuts), 2 c. rice, 3/4 c. olive oil, approximately 3/4 c. plain bread crumbs and 1/4 c. salami, sliced and cut into small pieces, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook rice to tender.
Drain and put aside.
Fry onions to light brown.
Add salami, then bread crumbs to absorb oil.
When cool, mix all ingredients, including eggs, pine nuts and cheese, etc.
Shape into meatball size or smaller.
Fill dish with bread crumbs and roll balls to cover.
Fry in deep oil or fry in pan to golden brown.
Drain.
