Shrimp Provencale
Shrimp Provencale is an moderately easy dinner. Made with 1 1/2 lb. large shrimp, shelled and deveined, 1 lb. sliced mushrooms, 2 garlic cloves, minced, 3 medium tomatoes, diced and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

About 45 minutes before serving in a 12-inch skillet over medium heat in 2 tablespoons of oil, cook shrimp, stirring often about 3 minutes until shrimp turn pink; set aside.
In same skillet, add 1 tablespoon of oil.
Add mushrooms; cook until tender, about 3 minutes.
Add tomatoes, lemon juice, salt and pepper.
Cook 3 minutes more.
Return shrimp to skillet.
Heat through.
Sprinkle with parsley.
Serve with rice.
