Shrimp Creole
Shrimp Creole is an moderately easy dinner. Made with 2 tbsp. margarine or butter, 2 stalks celery, chopped, 1/2 green pepper, chopped, 1/2 c. tomato juice or vegetable juice and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt margarine in skillet over medium heat.
Add celery, green pepper and onion; saute until tender.
Add tomato juice, salt, basil and Tabasco; bring to a boil.
Add shrimp.
Reduce heat to low and simmer, uncovered, for 30 minutes.
Serve over rice. Makes 4 servings.
