Shrimp Chowder
Shrimp Chowder is an moderately easy dinner. Made with 4 large onions, peeled and sliced, 1/4 c. butter or margarine, 1 c. boiling water, 6 medium potatoes, pared and cubed and 1 tbsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
About 1 hour before serving: In Dutch oven, sautΓ© onion slices in hot butter or margarine until tender.
Add boiling water, then potatoes, salt and seasoned pepper.
Simmer, covered, for 20 minutes or until potatoes are tender; do not drain.
Meanwhile, heat milk with cheese until cheese has melted and milk is hot; do not boil.
Add shrimp to potatoes and cook until they turn pink, about 3 minutes.
Add hot milk and cheese mixture.
Heat, but do not boil; sprinkle with parsley.
Makes 8 servings.
