Shortbread Cookies
Shortbread Cookies is an moderately easy dinner. Made with 1 lb. butter, 1 c. granulated sugar, 5 to 6 c. flour, 1/2 lb. powdered sugar and 2 to 4 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream butter in mixer until smooth.
Add granulated sugar and beat until light and fluffy.
Add enough flour until mixture sticks together.
Gather dough and divide into 6 portions with minimum handling and using wax paper or foil.
Shape each dough into small log.
Wrap in foil and refrigerate overnight or until firm enough to slice.
Slice into 1/2-inch pieces and place on ungreased pan.
Bake at 275Β° for 45 minutes or until slightly brown on bottom and then cool.
Blend powdered sugar with lemon juice until smooth.
Frost top of each shortbread cookie.
Garnish with slices of maraschino cherries if desired.
Makes about 6 dozen cookies.
