Shoe Peg Corn Casserole
Shoe Peg Corn Casserole is an moderately easy dinner. Made with 1 can shoe peg corn (regular corn may be substituted), 1 can french-cut style green beans, 1 can cream of mushroom soup, 1 c. sour cream and 1 c. shredded sharp cheddar cheese, this recipe delivers authentic, satisfying flavors. Drain water off corn and green beans.
Mix corn, green beans, soup, sour cream and cheese in a large bowl.
Be sure to mix well. Pour mixture in a casserole dish.
Crumble crackers into fine crumbs.
If you don't have a food processor, a blender works great (or your hands).
Spread crumbs on top of casserole.
Pour melted butter on top of cracker crumbs.
Bake at 350Β° until it shakes like jello and is warm throughout, about 20 to 30 minutes.
