Shepherd's Pie
Shepherd'S Pie is an moderately easy dinner. Made with 1 small onion, chopped, 1 clove garlic, chopped, 1/2 small red pepper, chopped, 1 lb. ground beef or left over meat (roast, steak), cut in cubes and 1 large can progresso minestrone soup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute onion, garlic and red pepper until soft.
Add ground beef and brown.
In a casserole dish, add soup, tomato sauce and seasonings.
Add meat mixture and stir well.
If you are using left over cooked meat, just add it to the soup; do not cook again.
Mash the potatoes and spoon over the soup and meat mixture around the dish, leaving a hole in the middle to let steam escape.
Bake at 350Β° for 40 minutes; the potatoes should be browned and mixture bubbling.
