Combine first three ingredients in top of double boiler and beat with egg beater until ingredients are mixed.

Place over rapidly boiling water and beat constantly with beater 7 minutes or until frosting stands in peaks.

Remove from water.

Add extract. Fills and frosts top and sides of 2 (9-inch) layers.

If you want chocolate 7 minute frosting, fold in 3 squares melted unsweetened chocolate just before spreading.
