Semur Jepara
Semur Jepara is an Indonesian sweet-soy beef stew with potatoes, shallots, tomato, nutmeg, clove, and fried shallots. The dark kecap manis sauce should be glossy and aromatic.

Brown beef chunks in a little oil, then remove them while the aromatics cook.
Fry shallots, garlic, tomato, nutmeg, and cloves until fragrant and jammy.
Return the beef with kecap manis and enough water to braise slowly.
Add potatoes and simmer until the meat is tender and the sauce turns glossy.
Finish with fried shallots and green chiles before serving with rice.
