Seafood Chowder
Seafood Chowder is an impressive soup you can prepare in about 2 hours 14 minutes. Made with c. finely minced onion, c. butter, melted, c. chicken or fish stock, c. chopped celery and c. finely chopped carrots, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Saute onion in butter for 3 minutes; add stock, celery, carrots, salt, pepper, bay leaf and thyme.
Simmer gently 10 to 15 minutes.
Add fish; simmer 5 minutes.
Remove bay leaf. Make smooth thin paste of 1 cup milk and flour.
Add to hot mixture and cook, stirring, until thick. Stir in remaining milk, cream, crab meat and clams.
Serves 6.
