Seafood Cacciatore
Seafood Cacciatore is an moderately easy dinner. Made with 1 large onion, cut into strips, 1 green pepper, cut into strips, 2 tbsp. oil, 1 (16 oz.) jar spaghetti sauce and 1 (8 1/4 oz.) can stewed tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook and stir onion and green pepper in hot oil in a large skillet.
Add spaghetti sauce, tomatoes, shrimp, scallops, wine, basil and oregano.
Bring to a boil; reduce heat, cover and simmer for 5 minutes.
Stir in the rice; cover.
Remove from heat.
Let stand 5 minutes.
Makes 4 servings.
