Sea Reef Salad
Sea Reef Salad is an moderately easy dinner. Made with 1 (16 oz.) can salmon, 2 eggs, hard-boiled and chopped, 1/2 c. ripe olives, chopped, 1/2 c. toasted almonds, sliced and 2 tbsp. gelatin (unflavored), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Drain and flake salmon.
Mix salmon, eggs, olives and almonds. Soak gelatin in cold water for 5 minutes.
Dissolve over hot water.
Add mayonnaise, sour cream, onion, salt and lemon juice. Mix and combine with salmon mixture.
Mold and place in refrigerator until congealed.
Remove from mold.
Garnish with parsley.
Serve.
