Scotch Shortbread
Scotch Shortbread is an easy dinner. Made with 1 c. soft butter, 2 1/2 c. sifted flour and 5/8 c. sugar (1/2 c. + 2 tbsp.), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix together butter and sugar; stir in flour.
Mix thoroughly with hands.
Chill dough.
Roll out.
Cut into squares; prick squares with fork.
Place on ungreased baking sheet.
Bake at 300Β° for 20 to 25 minutes.
The tops do not brown during baking, nor does shape of cookies change.
Sprinkle granulated sugar on cookies after baking.
Cool and store in airtight container. Yields 2 dozen 1- inch to 1 1/2-inch cookies.
