Scotch Shortbread
Scotch Shortbread is an easy dinner. Made with 1 c. (2 sticks) butter, 1/2 c. sugar, 2 1/2 c. all-purpose flour and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream butter.
Gradually add sugar; beat until light and fluffy.
Combine flour and salt; gradually add to creamed mixture. Blend well.
Roll out dough on a lightly floured surface to 11 x 17-inch rectangle 1/2-inch thick.
Cut into 1-inch squares or diamonds.
Transfer to cookie sheets.
Prick cookies with a fork. Bake in preheated 300Β° oven for 25 to 30 minutes or until lightly browned.
Remove immediately to wire racks to cool.
Yields about 70.
