Scotch Oatmeal Shortbread
Scotch Oatmeal Shortbread is an moderately easy dinner. Made with 1 c. butter, 2 1/2 c. rolled oats (quick), 1/2 c. white sugar, 1 c. flour and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cream butter.
Add sugar and salt.
Add flour.
Blend.
Add almond flavoring.
Add oats.
Press onto cookie sheet to form rectangle 1/2-inch thick.
Cut into strips length and breadth of little finger.
Separate cookies.
Bake about 20 minutes at 350Β°. Leave on pan until cool.
Very festive if decorated with frosting rosettes.
Makes 3 to 4 dozen cookies.
