Scallops Scampi
Scallops Scampi is an moderately easy dinner. Made with 1 lb. scallops, 1/3 c. salad or olive oil, 1 medium onion, 2 large cloves garlic, minced and 2 tbsp. fresh parsley, snipped, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In heavy frypan, saute onion, garlic and parsley in oil until onion is tender, but not browned.
Add scallops and simmer, turning often, until cooked (about 10 minutes).
Season to taste, sprinkle hot, cooked linguini liberally with cheese.
Spoon scallop mixture over all.
Serves 4 to 6.
