Sausage Quiche
Sausage Quiche is an moderately easy dinner. Made with 9-inch pie crust, 1/2 lb. hot sausage, 1/4 c. chopped onion, 2 eggs, slightly beaten and 1 (12 oz.) can evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 400°.
Line 9-inch pie crust with wax paper and top with dry beans (enough to weight the wax paper).
Bake 10 minutes.
Carefully remove the wax paper and beans.
(I save the beans to use again.)
Reduce oven to 375°.
