Brown sausage in skillet.
Chop sausage into small chunks. After browning sausage, drain fat, reserving 3 tablespoons of fat. Add the flour; brown flour and fat.
Add drained sausage.
After mixture has been browned, gradually add milk; simmer until thickened.
Add pepper and sage while gravy is simmering.
